The end of October already, time sure goes by quickly. It was below zero last night and very chilly today, but the sun was out and turned out to be a beautiful day. I woke up early this morning and decided to make Holiday Left-Over Sweet Potato Cake, a recipe I found on Allrecipes. You can use your left-over sweet potato from the holidays. The cake is very moist and goes great with a fresh brewed cup of java. I micro-waved a large sweet potato for 7 minutes, it came out perfect, the skin peeled away easily. I used 1-2/3 cups of sugar and substituted half the amount of sugar with Splenda. I used cut the oil to 2/3 of a cup. I didn't have beer so I substitued chicken broth, sounds weird but it worked.

The cake sounds yummy! I have never heard of a recipe that uses beer in a cake. I learn something new everyday. Down here they like to use sweet potatoes for sweet potato pie.
